Hey Thanks Adrian!

I'm surprised the cumin/cayenne pepper would be a problem when you're using Pepperjack Cheese! lol :-) but I'm glad you liked it! I do like Butternut Squash, so the flavor didn't seem overwhelming to me, (or to my squash hating daughter) but I'm sorry some of your guests thought so!

Thanks Again!

Hello! I just made this over the weekend. I used Monterey Jack (a mix of jalapeno and regulare) instead of manchego, and it turned out very well. You must be a bnut squash lover, however. Those int the group who weren't commented that the sweet taste of the squash, in a main pasta dish, turned them off. Oh well, their loss! I also mixed romano beans and white kidney beans (1 can each) instead of dried navy...you can't seem to buy canned navy in my neck of the woods, unless you want BAKED beans...and I used a bit of paprika instead of cumin/cayenne as, despite my OWN preferences, several people I was making it for can't stand anything vaguely hot spiced. Thaniks!
