So I baked a couple of batches and she baked a couple of batches. As I started my baking and began to actually look at the recipe I noticed that it called for 1/2 a cup of cornstarch. What! Can that be correct? I called up Kate, wondering what she thought. Could it have been a typo? Then I went back and read the entire blog post where Kate had found the recipe. It was no typo. Skeptical, I went ahead and make the cookies according to the recipe and I’m so glad that I did. This has become one of my favorite shortbread recipes. The texture is great as is the flavor.
