Sweet Pepper Cucumber Apple Salad
The other night, I was making a quick pasta dish for dinner – and I thought I would use the sweet peppers that I received in this week’s FFTY box. However, as I was chopping and prepping, I popped a piece of pepper (not a pickled pepper, peter piper – lol!) in to my mouth, and knew that I couldn’t cook these beauties. They had such a sweet, light flavor – I knew I wanted to showcase them in a dish that would let them shine.
It’s a good thing this salad was quick and easy to assemble though, since it really ended up being a very last minute sort of thing – the pasta I was making had a lot of fresh veggies in it already, so I hadn’t really planned on making anything to go with it – but it ended up working out in the end. Miss Thing of course complained that there were apples in it, as usual.
Since it was a last minute thing, I didn’t get to take as many pictures as I would have liked – I only barely managed to get a picture at all. We’d spent a large chunk of the evening helping Miss thing with her algebra, dinner was running a little late, and Mr. Man and Miss Thing tend to get a little fussy when I take too long taking pictures before coming to join them at the table.
Hopefully all the studying will be worth it. Miss Thing is having a huge algebra test this week. They’re testing the material for the whole year, and she’s still struggling to stay on top of her current chapter – so let’s just say, it’s been an adventure. Thank goodness for three day weekends, eh?
Ingredients:
- 1/2 cup Plain, unsweetened Yogurt
- 1/4 cup Mayonnaise
- 1 cucumber; sliced
- 1 apple; cored, quartered, and sliced
- 4 small sweet peppers; cut in to thin strips (about 1 and 1/2 cups)
- 1 tbs Honey
- 1 tbs Fresh Mint; finely minced
- 3 tbs raw/natural Almonds; coarsely chopped (optional)
- Kosher Salt (to taste)
Method:
- Place the peppers, apple, cucumber and almonds (if desired)
- In a small bowl, whisk together the mayonnaise, yogurt, honey and mint and
- Pour the yogurt mixture over the peppers, apples and cucumber
- Add Kosher Salt to taste
- Toss to combine
- Serve immediately
