Broiled Peas and Carrots
The last couple of dishes I’ve made with Snap Peas from my FFTY boxes have been a little ho-hum… well, we’re splitting the difference. The more recent one was just a disaster, but week before that was the PeanutĀ Pasta with Peas & Carrots which turned out pretty well. So I don’t remember where I got the idea for this recipe, although I do remember seeing something similar on another site, once upon a time. However, when I received peas and carrots in this week’s box, I knew I wanted to try broiling them. If I’d known how delicious this was going to be, I totally would have made it sooner. I mean, I’m calling them Broiled Peas and Carrots, but they should really be titled “OMG – the most awesomest way to eat peas and carrots ever invented! EVAR.”
Anyways, the busy weekend means I didn’t get to cook as much as I would have liked – and that I’ve had way more junk food than I would have liked either. Miss Thing insisted that homemade pizza isn’t as good as delivery – so she wouldn’t let me make the pizzas, which is just as well because, although most of her friends are nice enough – their palettes tend to be a little unrefined. In other words, they are picky. And I so hate cooking for picky people.
Moving right along, however – this dish is, as I said before The Most Awesomest Peas and Carrots Evar, also known as Broiled Peas and Carrots, is so simple and easy to make, it almost doesn’t even qualify as a recipe. I think for the remainder of the Snap Pea Season, this will be my go-to preparation method for them.
Ingredients:
- 1/2 lb of Snap Peas; washed and trimmed
- 1 bunch small carrots; washed and thinly sliced on the bias
- 2-3 tbs Olive Oil
- Kosher Salt
- Fresh Ground Black Pepper
Method:
- Preheat broiler
- In a bowl, toss together the snap peas, carrot slices, kosher salt and 2-3 tbs Olive Oil (or enough to coat the peas and carrots)
- Spread Peas & Carrots in an even layer on a baking sheet
- Sprinkle with fresh ground black pepper
- Place under broiler for 5-10 minutes, or until tender-crisp
- Serve Immediately
