Lemon Roasted Garlic Mixed Green Salad
Miss Thing had an interesting afternoon yesterday. Originally, she was wanting to go to the mall with one of her friends after school. She and I are still butting heads a little bit about whether she should be allowed to go to the mall by herself or not yet, and I gotta say I’m still inclined towards ‘not’. But in the interest of compromise, I agreed to take her to the mall and stay at the mall, but not with her at the mall – as long as she was with her friend. Unfortunately, before that compromise could be enacted – Her friend had to cancel.
So instead we went to pick up supplies for a school project, and afterwards we dropped by Cold Stone Creamery and picked up some ice cream. (The guy behind the counter was a moron, and mine had to be remade – but thats another rant.) The weather was lovely and warm, so we stepped outside to enjoy our ice cream. It was one of those open aired down-town style shopping areas. Many of the kids from Miss Thing’s school go to that area after school – so it wasn’t too surprising that we ran in to some kids from her school.
What was kind of nice though, was that Miss Thing, who was more than a little disapointed about the canceling of plans earlier, ran in to a group of girls that she knows from her P.E. class. We talked it over, and I agreed to let her hang out with them while I headed to a nearby store and browsed. She had a lot of fun – when I texted her and asked her to come meet me so we could leave, she showed up with one of the girls asking if she could have a friend spend the night. lol – it was great. I’m so glad she’s finally settled in and made some friends. Although, I could have done without the ‘bad girl attitude’ she gave off for a little while last night trying to impress the girl.
Anyhow – since we’d been gone all afternoon, and we had guests, dinner was a simple affair of a faux pizza type dish (since I didn’t have any pizza dough) and this salad. Of course, Miss Thing’s friend turned up her nose at salad – but hey. This salad dressing packs a whole lot of flavor. I tossed it with the salad mix I made from my last Farm Box, Carrot Greens, Pea Greens (Pea Shoots), and Green Leaf Lettuce. A touch of sugar helps balance the acidity of the lemon, but keeps the flavor bold to stand up to the carrot greens. The Pea Greens, by the way – were my favorite part. I’m NEVER going to cook them again – they were so incredible in the salad. I will be very sad when they go out of season.
- 4 cups Mixed Greens (I used Carrot Greens, Green Leaf Lettuce, and Pea Greens)
- 1/4 cup Homemade or Store bought Mayo
- 1 Lemon; juiced
- 2 Tbs Parsley
- 1 tsp Roasted Garlic
- 1/2 a tsp Kosher Salt
- Pinch of Sugar
- Whisk all ingredients to combine.
- Toss desired amount with mixed greens
- Serve Immediately
