Farm Fresh Box – A week in Review

Tonight, I’m waiting for my next Farm Fresh Box, and thought it’d be interesting to review my experience with it. Having all of my weekly vegetables laid out for me ahead of time, really forced me to be creative with the way that I used them. It was quite the kitchen workout for me, and I really enjoyed it. Some of the veggies I liked better than others.

I managed to use everything except a couple of apples, which is no mean feat, considering I had some veggies that I had previously purchased. I was incredibly impressed with the quality of everything. The regular box that I signed up for seems to be about the perfect size for our family of three. So how did I use everything?

Well – The Romaine Lettuce, was used simply – as salad. At some point, I’ll try and post the dressing recipe I used for it. The tangelos barely survived the next day (in fact, I ended up running to the store and buying more tangelos because they were such a hit – I’d forgotten how much I loved Tangelos). The Red Onions were also used up fairly quickly, making their way in to several recipes, and the artichokes we steamed and served with Homemade Mayonnaise, which was a lot of fun. Mr. Man had never had a fresh artichoke before, and  really enjoyed it. Miss Thing was less-than-thrilled, not being an artichoke or a mayo fan.

I Roasted the Purple Potatoes, Glazed the Carrots, used the apples in a Dressing, a Pot Roast and Scones. The Kale, was used in a Frittata, the Radicchio and Fennel were Roasted with Cauliflower that I already had, and I sauteed the Collards and PeaGreens (although I don’t recommend that method for the Peagreens).

All in all – quite the creative week. :-) My next box will be here either tonight or tomorrow – and I’m really looking forward to another week of inspiring dishes.
