Homemade Tarragon Brown Mustard

In my recent kick to try and make as much of my own things as I can, I decided I’d try making some homemade mustard the other day. We had it on some roast beef sandwiches the other day with my Homemade Mayonnaise and together, they were incredible. It was so easy, I’m definitely going to try making some other varieties


  • 1/4 cup Brown Mustard Seeds
  • 1/4 cup White (yellow) Mustard Seeds
  • 1 Cup Champagne Vinegar
  • 1/2 a cup Fat Tire Beer (or other good quality IPA)
  • 1 – 2 tsps Kosher salt (to taste)
  • 1 tbls Tarragon (optional)


  • Place all ingredients except the salt and tarragon in to a jar and allow to sit for 24 hours
  • Strain mustard seeds, reserving liquid, and place in food processor
  • Puree seeds, adding reserved liquid back in a little at a time, until fully recombined and smooth-ish
  • Add Tarragon (if desired) and kosher salt (to taste)
