Golden Cookie Sandwich with Chocolate Filling

Miss Thing is the last in our household to get the plaque that has been traveling around. Poor thing is all sniffles and sore throat. It’s unfortunate, because it’s also the week that she has for doing some big project for school, but you know, you can’t really help when you’re sick. While she was at home on Monday and supposed to be resting, she came in to the kitchen, all sniffles and just so pathetic looking and said “Mommy-Pants… will you make me something yummy? Something sweet, Something new – something you’ve never made before.”

Lucky for her, I’d already been percolating some new ideas so I told her, like any good mother, “Go back to bed and rest.” And then devised these. The cookies came out a little bit chewier than I had been shooting for – I was hoping for more cake-like, but despite of that, they’re delicious. This is for a double batch – mostly because I wanted enough material to use my fall back plan, which didn’t end up being neccessary. (That is another post!)


  • 4 sticks of Butter, softened
  • 2 cups brown sugar
  • 1 cup sugar
  • 4 whole eggs
  • 2 egg yolks
  • 3 tsp Vanilla
  • 2 1/2 Cups Cake Flour
  • 2 Cups Flour
  • 2 tsp Baking Soda
  • 1 tsp Kosher Salt
  • 1 batch Chocolate Frosting


  • In a medium bowl, stir together Cake Flour, Flour, Salt and Baking Soda. Set aside.
  • In a large bowl, cream together Butter and Sugar until Fluffy
  • Mix in vanilla
  • Add Eggs and egg yolks, one at a time, allowing each one to become incorporated before adding the next.
  • Working in batches, begin mixing in Flour mixture
  • When Flour mixture is incorporated, refrigerate cookie dough for 24 hours (recommended) or until thoroughly chilled
  • Preheat oven to 350°
  • Line a baking sheet with parchment paper
  • Drop Cookie Dough in rounded spoonfuls or scoops on baking sheet
  • Bake for 10 minutes, or until Golden brown and centers of cookies are set
  • Remove to Cooling rack and allow to cool completely
  • Assemble Sandwiches using Chocolate Frosting as a filling
