Bacon Chocolate Chip Bar Cookies with Maple Cream Cheese

The other night Mr. Man and I came across this blog called Brownie Points, where someone had decided to make Bacon infused Vodka. The idea, of course, sparked a whole conversation and then an hour of searching on the interwebs about what else could you do with the smoky porkness of awesome. There were many ideas borne in my little culinary heart, but the first to bloom was the inspiration for this little gem, since I already happened to have all the ingredients on hand. :-)

I prefer the chewy denseness of a bar cookie – Mr. Man likes drop cookies because they hold up better to dunking in milk. This recipe can be prepared either way, I just happened to feel like making bar cookies tonight. Next time I think I might increase the bacon pieces – I erred on the side of caution. I think I’ll use 1 cup next time instead of only 1/2 cup. They were delicious.

Cookie Ingredients:

  • 2 sticks butter
  • 1/2 cup sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 and 1/2 tsp vanilla
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 2 and 1/4 cup flour
  • 5 oz good quality bittersweet or semi-sweet chocolate; chopped in to small chunks
  • 1/2 cup finely chopped crispy bacon
  • Maple Cream Cheese (optional; recipe follows)
  • 4-5 slices cooked bacon, coarsely chopped for garnish (optional)


  • Preheat Oven to 350°
  • In a medium bowl, stir together the Flour, Baking Soda and Salt
  • In a large bowl cream together butter and sugars until fluffy
  • Beat in the Eggs and Vanilla
  • In batches, mix the flour in to the egg mixture, letting each batch become fully incorporated before adding the next
  • Stir in Bacon pieces and Chocolate pieces
  • Spread in to a parchment paper lined 9×13 inch pan
  • Bake until set and golden, approximately 25 minutes
  • Allow to cool completely, and then top with Maple Cream Cheese and Chopped Bacon if desired

Maple Cream Cheese Ingredients:

  • 8 oz Cream Cheese
  • 1/4 cup + 1 tbls Maple Syrup
  • 1 tsp Vanilla

Whisk all ingredients together until smooth
