Cheese & Sausage Muffins
I know – I’ve been on a bit of a Sausage Kick lately – Mr. Man and Miss Thing are both super-huge sausage fans, and it has the benefit of being fairly economical and very versatile. I was in the mood to bake something, but Mr. Man tends to get a little bit grumpy if I make too many sweets. I think next time around I would increase the salt a little bit. This is a large recipe suitable for large crowds or planned leftovers. If a smaller batch is desired, just halve the recipe. While I was making it, I also didn’t realize that one of my muffin pans seems to have gone MIA since the move – or atleast hasn’t been unpacked yet, so rather than do two batches in one muffin pan, I took the remaining muffin batter and poured it in to a loaf pan. It took longer to bake than the muffins, but seems to be just as tasty.
Ingredients:
- 1 lb Sausage
- 1 onion; diced
- 4 cloves garlic; minced
- 6 cups Flour
- 8 tsp baking powder
- 4 tbls sugar
- 2 tsp salt
- 4 eggs
- 1/2 cup Olive Oil
- 1/2 cup Vegetable Oil
- 1 cup Sour Cream
- 2 cups Milk
- 1 cup Cheddar Cheese; shredded
- 1 cup Monterey Jack Cheese; shredded
- 1 tsp Chili Pepper (Optional)
- 1 tsp Cumin (Optional)
- 1 tsp Mustard (Optional)
- 1 tsp Paprika (Optional)
- 1/2 cup Italian Parsely, finely chopped
- 1 sprig Rosemary; destemmed and finely chopped
Method:
- Brown and Crumble Sausage in skillet over medium heat
- Add onions and garlic, stirring occasionally until onions are translucent
- Remove from heat and set aside
- In large bowl stir together sugar, baking powder, flour, salt and spices (if desired) and set aside
- In medium bowl, beat eggs
- Whisk in milk, olive oil, vegetable oil and sour cream until combined
- Reserve 1/2 cup of the Sausage Onion mixture and 1/2 cup of the cheese
- Stir remaining Sausage mixture and Cheese in to Flour Mixture
- Make a well in the center of the dry ingredients and add liquid ingredients
- Fold together liquid and dry ingredients, until combined (but don’t overmix!)
- Stir in Parsley and Rosemary
- Pour Mixture in to buttered muffin pans or buttered bread pan (if using bread pan, increase baking time to 30 minutes)
- Top with reserved Sausage & Cheese
- Bake in 350° Oven for 15 minutes, or until browned
