Creamy Chanterelle Soup

Ingredients:

1 Onion, diced
4 Cloves Garlic, minced
2 Cups Heavy Whipping Cream
1/4 cup Sour Cream
1/4 cup Cottage Cheese*
1 Quart Beef Broth
1 lb Chanterelle Mushrooms*, coarsely chopped
1/8 cup White Wine; divided
1 tsp Beef Bouillon*
1 tbls Olive Oil
1 tbls Soy Sauce
Kosher Salt
1/4 cup fresh Italian Parsley, finely chopped (optional)

Garlic Roasted Brussel Sprouts

Ingredients:

4 Cloves Garlic; minced
3 Shallots; chopped
2 lbs Brussel Sprouts, washed and cut in halves
4 tbls Olive Oil
2 tbls Italian Parsley; minced
Juice from One Lemon
1/8 cup cooked bacon; coarsely chopped (optional)
3 Generous Pinches of Kosher Salt

Method:

Preheat Oven to 400°
Toss Brussel Sprouts with Olive Oil, Garlic, Shallots and Kosher Salt.

Rosemary Romano Fingerling Potatoes

Ingredients:

3 Cloves Garlic; minced
2 Shallots; chopped
1lb Fingerling Potatoes
2 tbls Olive Oil
1 Sprig of Rosemary, destemmed and finely minced
1/2 cup Romano Cheese; finely shredded
2-3 Generous Pinches of Kosher Salt

Method:

Preheat Oven to 400°
Cut any large Fingerling potatoes in to smaller pieces
Toss Potatoes with the Garlic, Shallots, Rosemary, Olive Oil and Kosher Salt until coated.

8 oz  Crimini Mushrooms; sliced
1 medium onion; diced
5 garlic cloves; minced
1 1/2 sticks butter
2 quarts Chicken Broth
1/8 cup White Wine
1 tbls White Wine Vinegar
2-3 tbls finely minced Rosemary
1-2 tbls finely minced Thyme
3-4 tbls chopped Italian Parsley
1-2 tbls minced Sage
