Yay! We're in Seattle. Arrived yesterday, and we got in early enough to take in some sights at }{Pike's Place Market. Today, we're going to rent a car and drive around the more far flung areas. Should be fun.

The hotel we're staying at is pretty nice, and very convenient to downtown areas, and we have the most amazing view... /end sarcasm. See for yourself:

Anyhow, after kicking around Pike's Place Market, we stopped off and got an Espresso at teh very first Starbucks. There was a line coming out the door. It was fun though. We picked up a couple of bags of their "Pike's Place" blend to take home, too. Here's us at the window while we were in line to get coffee.

Balsamic Chicken with Capellini Pomodoro

Balsamic Chicken

  • ¼ cup Balsamic Vinegar
  • 1 cup White Wine
  • 1 tbls Olive Oil
  • 1 tsp Dried Oregano
  • 1 tsp Dried Parsley
  • 1 tsp Dried Thyme
  • 1 tsp Kosher Salt
  • 1 lb Chicken Breast

Prepare marinade and pour over chicken. Allow to sit for at least an hour, but preferably longer. (I left mine in overnight). Pan-fry in a little bit of olive oil or grill over medium coals.

Cappellini Pomodoro

  • 1 onion; chopped
  • 4 garlic cloves; minced
  • 2 tbls Balsamic Vinegar
  • 3 tbls Red Wine
  • 2 tbls Olive Oil
  • 5 Roma Tomatoes; cut in to chunks
  • 16 oz Cottage Cheese
  • ¼ cup Fresh Basil; julienned
  • ¼ cup Fresh Oregano; chopped
  • 1 lb Angel hair pasta; very slightly undercooked
  • Kosher Salt (to taste)
  • Fresh ground pepper (to taste)
  • Romano cheese; shredded (optional)

Over medium heat, Saute onions and garlic with some olive oil in wok or large skillet until onions are translucent and slightly golden-y. Stir in balsamic vinegar, red wine and olive oil and reduce heat. Toss cooked pasta in pan and toss with onion mixture. Add tomatoes and cottage cheese and stir to combine. Heat gently until tomatoes are warm through. Stir in Basil and oregano. Top with shredded Romano cheese if desired.
